Sweet Potato Chips

I just bought a new vegetable slicer specifically for this recipe and I'm in love.  It is wonderful as a healthy side with steaks or burgers.  The sweet potatoes were delicious!  I can't wait to try it with russet potatoes, red potatoes and any and all types of veggies.  The seasoning that the recipe calls for is delicious.  So is just plain salt.  I also want to try it with a touch of parmesan cheese.  So many possibilities!

Sweet Potato Chips

1 sweet potato
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon salt

Preheat oven to 375*
Slice the potato very thin with vegetable slicer.  Spray a baking sheet with cooking spray.  Arrange slices in single layer and lightly coat with cooking spray.  Bake for 7 minutes until just starting to brown.  Remove from oven, turn potatoes over, return to oven and bake another 7-10 minutes until browned.
In a small bowl, combine spices, sprinkle over the chips, toss well and serve.

Original recipe can be found HERE.
